All classes are $40. Discounts when groups enroll as follows:
1st person:$40 ; 2 person discount:
$75; 3 or more: $35 each.

Nov. 8 --DEMYSTIFYING RISOTTO
Demystifying Risotto--few food are as
satisfying as a classic risotto served fresh. We'll take the mystery
out of this. Show you the simple techniques behind those typically
vague instructions found in most risotto recipes and how to tell
when it's perfectly done! The great payoff for risotto is, like
pasta, there are a million ways to accent it with your favorite
flavors.

Ah....2 Italian Classics in one class.
I'll share with you my recipes that I've made at home (for my 4
sons) for years. Nothing like eating soothing meatballs freshly
cooked.

but rarely found in America, pasta dish.

May 16, 7:00 p.m.: Guest Sicilian "Chef" Luccio, Sicilian Caponata
Our First Guest "Chef." Come
and meet my Sicilian Friend, Luccio Zappoli. Born and raised in
Sicily. You will love his charm and wit and he will show us how to
make Sicilian Eggplant Caponata. Don't miss out.
Eggplant is a favorite Italian
vegetable (vedure). Luccio will show us how to make this dish which
is combined with Extra Virgin Olive Oil and other vegetables to make
a delicious antipasti dish. You'll love the Caponata and Luccio!
SOOTHING POLENTA
Polenta--po...whatta. Polenta. The staple
of "poor Italians" who learned how to turn life's simple abundance
into all things glorious. It's simple, but needs TLC, then we'll
show you some both sweet and savory additions to the basic polenta.

BREAD & FOCACCIA
Making homemade bread. We'll make AND
EAT Italian Focaccia bread. We'll make two types: the
classic Rosemary (with
fresh rosemary from my garden) and a Cheesy Zucchini and Red Onion
variety--a meal in itself. The antipasti this time will be a nice
soup to go with the fresh bread. And of course a glass of wine.
